A simple, very fast Thai prawn curry: onion and ginger softened in oil, red curry paste fried briefly, then tinned tomatoes and coconut cream added and simmered for 5 minutes before the frozen prawns go in. Done in 20 minutes from start to finish. Good for a quick weeknight meal.
