Bolita di Keshi

Aruban deep-fried cheese balls made from a mixture of cheddar and feta, bound with egg and cornstarch. The outside fries to a crisp golden crust while the inside stays molten and salty. Good as a starter or a snack. Makes about 24–30 balls.
